Pearl's Depression Era Coconut Cake

The Scout C4's 2oz
My family has dedicated most of our lives to the Boy Scouts and Girl Scouts. One of my fondest memories of camping is when my dad would make coffee in the percolator over the fire and cook bacon on a huge slab of slate on a bed of coals. Well this cookie is a tribute to my dad and all Scout parents out there. This cookie is loaded with espresso, chunks of crispy bacon and semisweet chips. YUM

This cookie is my tribute to the state of Texas and the beautiful flower that it's named after. If you've ever seen the teen pop classic Mean Girls, you will get this reference: I made fetch happen! Get your pink on ladies, it's Wednesday. This peanut butter cookie is loaded with toffee, whole peanuts, peanut butter chips and it's wrapped around a Snickers Bar and then baked to ooey gooey perfection.
This here folks is where it all began. I found a simple recipe for snickerdoodles in a cookbook that I was given, and tried it out. They looked rather decent, and tasted great. So I made another batch, then another until I got them just right. I was 15 years old and entered my first baked goods into the county fair. I won a blue ribbon for my snickerdoodles and for the next 12 or so years i won a blue ribbon. Let yourself feel like a winner, try my snickerdoodles!
